The 20-suite hotel hovers over the waterfront, situated on a slope that leads to a private beach. Guests enter the operatic three-story main building on the highest floor, which has a ceiling of Tasmanian celery top pine; the second floor has another lounge with a full-service bar, as well as the restaurant Palate. And the bottom floor’s art gallery exits onto a walkway that leads to the semi-detached suites. Getting to Saffire is the only difficult part: for most people, it involves a full day’s journey to Hobart and then another two and a half hours by car to Freycinet. But if you have frequent-flyer miles and time to spare, then it’s worth the effort to feel this far away from it all.
